ARROZ CAMPERO/Rustic rice


Hi guys,
I promised that I would teach how to cook a typical rustic rice so here it is. The first thing we need is to love to cook for the family so that the result will be excellent. We will need chicken and rabbit meat. Rabbit in the flavor of the rice is excellent and so we first we FRY the rabbit meat on high heat to a golden brown.
But the most important thing for good rice is not to cook it with water but with broth. This is its secret, so the flavor will be more intense.

Os prometí que os iba a enseñar un tìpico arroz campero y  aquí está. Lo primero que necesitamos es mucho amor para cocinar para la familia, por lo que el resultado será excelente.Necesitamos carne de pollo y conejo. El conejo en el sabor del arroz es excelente y así lo vamos a freir primero a fuego fuerte hasta que el color sea dorado. Pero lo más importante para un buen arroz es cocinarlo con caldo y no con agua. Éste es su secreto, por lo que el sabor será más intenso.


We are going to make the broth with vegetables, water, parts of the rabbit and chicken that have more bone and a white cow bone. Here is the picture.  You don’t need to put much salt in the broth right now because we can add more when we mix everything.
Vamos a hacer el caldo con agua, verduras y las partes de pollo y conejo que no queremos en el plato porque tienen poca carne y mucho hueso. Además, vamos a utilizar un hueso blanco como en la foto. No le pongáis sal al caldo porque este hueso tiene mucha y luego lo rectificaremos de sal cuando lo mezclemos todo.

The broth
The veggies for the broth are celery, carrot, pumpkin (optional), leek (especially the green part) and parsley.
Las verduras para el cado serán apio, zanahoria, calabaza (opcional), puerros (sobre todo la parte verde) y perejil.


How much time do we need to make the broth?  Once it starts boiling set your timer for 20 minutes.  This way it keeps all the vitamins. It is important to remove the fat that is left on top when it begins to boil . Look at the photo. Do not forget to put the rabbit's head, cut in two parts, (I know that grosses Americans out, but it will be good) into the broth. ¿Cuánto tiempo necesitamos para hacer el caldo?  A partir de que empiece a hervir contamos 20 minutos. Así conservará todas sus vitaminas. Es importante cuando empiece a hervir quitar la grasa que se queda por encima. Mirad la foto. No olvidéis poner tambien la cabeza del conejo cortada en dos partes (ya sé que os da un poco de rechazo a los estadounidenses, pero estará más bueno)

Then we are going to do what we call the SOFRITO, which is the basis of vegetables for the dish. Let's use the essentials: a clove of garlic, tomato, green pepper and onion. FRY everything in hot oil, then we are going to put it through the mixer. We can also add a bit of green pepper, salt, and white or red wine if it is good (sparingly and with high flame).

A continuación, vamos a hacer lo que en España llamamos el SOFRITO, que es la base de verduras para el plato.Vamos a utlizar lo básico: un diente de ajo, tomate, pimiento verde y cebolla. Freimos todo en aceite caliente y luego lo vamos a pasar por la batidora. también podemos añadir un poco de pimienta verde, sla, y vino blanco o tinto si es bueno. Este será en poca cantidad y con el fuego fuerte.

Once we have the basis of vegetables, prepared stock and browned meat we are going to clean and cut the additional vegetables that are in the dish. These are artichokes and carrots. Do not forget to put a little lemon in the rice so that it doesn’t turn out black. Cut the artichokes in three then throw some lemon in it.  Use 2 if it is a rice for 8 people.
Una vez que tenemos la base de verduras, el caldo preparado y la carne dorada, vamos a limpiar y cortar las verduras adicionales que lleva. Estas serán alcachofas y zanahorias. No olvidéis ponerle un poco de limón para que el arroz no salga negro. Poned unas tres cortadas en dos mitades si es un arroz para 8 personas por ejemplo.

  Here you can see the pieces of chicken and rabbit. Observe that they are more yellow because they are free range, i.e., natural and without hormones in the supermarket.Mirad aquí los trozos de pollo y conejo. Observad que son más amarillos porque son camperos, es decir, naturales y sin hormonas como en el supermercado.

Save the offal of the rabbit and chicken as you can use it another day. If it were a paella we would use it, but we don’t need soggy/such wet rice.
La asadura del conejo y el pollo la guardáis para hacer algo otro día. Si fuera una paella la usaríamos, pero no nos hace falta para el arroz caldoso.







  Now let's mix together: the fried meat, broth, sofrito, artichokes and carrots (which should be peeled and cut into large pieces). Ahora vamos a mezclar todo: la carne frita, el caldo, el sofrito, las alcachofas y las zanaharias peladas y cortadas en grandes trozos.

If there's leftover broth keep and freeze for another day.







Once everything is mixed, add rice and mix it well...About 80 grams of rice per person would be
 fine. Round rice takes more stock, so there should be two and a half part broth for each part rice.
Una vez mezclado todo, añadimos arroz y lo movemos bien.....Unos 80 gramos de arroz por persona estaría muy bien. El arroz redondo toma más caldo, así que el caldo debería ser unas dos partes y media por cada una de arroz.

The rice cook time is 18 minutes and two minutes standing.El tiempo de cocción del arroz es de unos 18 minutos y dos de reposo.








 Add any herb like Rosemary or thyme.  If you have fresh then that's better than dried.  It will give a very good taste and aroma.
Añadid alguna hierba aromática como tomillo o romero. Si lo tenéis fresco es mejor que de bote. Le dará muy buen gusto y aroma
